Black Pearl King Oyster Mushrooms: What They Are and How to Cook Them

If you have only ever seen pale King Oysters in the supermarket, Black Pearl King Oyster mushrooms will surprise you. They have dark, pearl-grey caps, thick meaty stems and a mild, nutty flavour that browns beautifully in a hot pan. We grow them from scratch on our farm in Fowey, Cornwall. This guide covers what makes the Black Pearl King Oyster mushroom different, how to prepare it, and our favourite way to cook it.

What Is a Black Pearl King Oyster Mushroom?

Black Pearl is a cultivated variety in the oyster mushroom family. It is widely described as a cross between the classic Oyster and the King Oyster, and it has the best of both:

  • Caps: dark grey to almost black when young, fading to a soft pearl-grey as they open.
  • Stems: thick, firm and fully edible – the stem is half the reason to buy them.
  • Growth: they grow in clusters rather than as single trumpets, so you get a mix of caps and stems in every handful.
  • Flavour: mild umami and nutty, with a meaty bite that holds its shape when cooked.

Black Pearl vs Standard King Oyster

A standard King Oyster (also sold as eryngii or king trumpet) is one fat white stem with a small brown cap. Black Pearl has more cap and a slightly more tender texture, while keeping that firm, chewy stem. In the kitchen that means:

  • More golden, crispy edges when pan-fried, because the caps brown quickly.
  • Less chopping – you can tear clusters into bite-sized pieces by hand.
  • Very good in dishes where you want a "meaty" texture without meat.

How to Prepare Black Pearl King Oyster Mushrooms

  1. Don't wash them. Mushrooms soak up water and then steam instead of browning. Brush off any bits with a dry pastry brush or a piece of kitchen paper.
  2. Trim the base. Slice off the very bottom of the cluster where the stems join.
  3. Tear or slice. Tear the cluster into pieces about 3–4 cm across. Slice any thick stems lengthways, about 1 cm thick.
  4. Cook them thoroughly. Like all oyster mushrooms, Black Pearl should always be cooked, never eaten raw.

Recipe: Pan-Roasted Black Pearl King Oyster with Butter, Garlic and Thyme

Serves: 2 as a side or on toast  |  Time: 15 minutes

Ingredients

  • 300 g Black Pearl King Oyster mushrooms, torn into 3–4 cm pieces
  • 1 tbsp olive oil
  • 25 g butter
  • 2 garlic cloves, thinly sliced
  • 4 sprigs fresh thyme
  • Flaky sea salt and black pepper
  • A squeeze of lemon juice
  • 2 thick slices of sourdough, toasted (optional)

Method

  1. Heat a large frying pan over a medium-high heat until properly hot. Add the olive oil.
  2. Add the mushrooms in a single layer, cut side down. Use two batches if your pan is small – crowding makes them steam.
  3. Leave them alone for 3–4 minutes until deep golden underneath, then turn and cook for another 2–3 minutes.
  4. Turn the heat down to medium. Add the butter, garlic and thyme. When the butter foams, tilt the pan and spoon it over the mushrooms for 1–2 minutes, until the garlic is lightly golden.
  5. Season with salt, pepper and a squeeze of lemon. Serve straight away on toasted sourdough or alongside a roast.

More Ways to Use Them

  • Autumn pasta: toss the pan-roasted mushrooms through tagliatelle with butter, Parmesan and black pepper.
  • Steak night side: roast thick stem slices at 200°C with olive oil and rosemary for 20–25 minutes.
  • Risotto topping: cook a batch as above and pile on top of a simple risotto just before serving.
  • Breakfast: fry with butter and serve with poached eggs on toast.

How to Store Them

Keep Black Pearl King Oysters in a paper bag in the main part of the fridge, not in sealed plastic, which traps moisture. They are at their best within 5 days. Brush them clean just before cooking, not before storing.
